Angie’s Recipe of the Day: Asian Lettuce Wraps
2 chicken breasts
2 cups mushrooms, minced
1 8oz can water chestnuts, minced
1/4 cup green onions, chopped
2 minced garlic cloves
Head of lettuce
1 T and 1 tsp coconut oil divided
Sauce: 2 Tb coconut aminos, 2 T honey, 1/2 tsp rice vinegar
Method: cut chicken into tiny cubes. Season with salt and pepper. Chop mush, green onions and water chests into bite size pieces. Sauté chicken with coconut oil for about 7 min, then add mush, water chestnuts, green onions, and garlic for about 2 additional minutes. Add sauce into pan and sauté all ing for about 2 more minutes. Serve in lettuce cups.
