Angie’s Recipe of the Day: Angie’s Paleo Chicken and Sausage Gumbo

2 lbs skinned Chicken breasts
1 lb Andouille Sausage
1 Cup Coconut Oil
1 cup Almond flour
2 c chicken broth
3 cups water
1 tbsp Tony Chachere’s
1 tsp Gumbo File’
1 tsp Cayenne Pepper
2 cloves minced garlic
1 small onion dices
1 cup mushrooms
1 bag frozen Gumbo veggies (Flavr Pac has a specific Gumbo mix that’s perfect) or Mixed veggies of your preference.
10 Dashes Tabasco Smoked Chipotle sauce (or regular Tabasco)

In skillet (preferably cast iron) make your roux by adding the cup of coconut oil and cup of almond flour over medium heat and stirring well and constantly until the mixture turns almost the color of a penny. Remove from heat and pour into your crockpot, add chicken, sausage,onions, garlic and all the spices along with the water and chicken broth. Turn on low simmer for 6-8 hours (chicken will be falling apart) add the veggies and mushrooms and turn up heat to high, stir well and cover letting the veggies cook for about 10-15 minutes…….stir again and serve up! Add sea salt, pepper and more tabasco to your taste.
