Angie’s Recipe of the Day: Blueberry Breakfast Muffin

Angie’s Recipe of the Day:  Blueberry Breakfast Muffin

Cooking Time: 50 minutes

Serves: 6

Ingredients and Cooking Steps

  • 1 lb ground pork or pork sausage
  • 4 slices of bacon
  • 4 oz blueberries
  • 2 eggs
  • 1 teaspoon fennel seeds
  • 1 teaspoon ground garlic
  • 1/2 teaspoon black pepper
  • pinch of sea salt

Preheat the oven to 400

In a large bowl, combine all ingredients. Get messy – use your hands – and mix it well. Pop a few blueberries!

Plop them into a muffin tin (makes 6) and bake for 50 minutes. My trick was to take ‘em out, pop them upside down on a rack and bake for another 5 minutes just to dry ‘em out a bit.

Delicious cold!

You could use this recipe for meatballs as well.
