Angie’s Recipe of the Day: Paleo Banana Cinnamon  Waffles

Ingredients:
WAFFLES
– 4 large eggs, room temperature
– 1 large ripe banana
– 1 cup coconut milk (cannned)
– 1/3 cup coconut oil, warmed
– 2 tsp. vanilla extract
– 2 Tbsp. raw honey
– 1/2 cup coconut flour
– 1/4 cup almond flour (I use Honeyville brand)
– 1/2 cup + 2 Tbsp. arrowroot powder
– 2 tsp. ground cinnamon
– 1 tsp. sea salt
– Melted coconut oil (to grease waffle iron)HONEY CINNAMON SYRUP
– 1/2 cup coconut oil, melted
– 1/2 cup raw honey, melted
– 2 tsp. vanilla extract
– 2 tsp. ground cinnamon

– Sliced bananas (optional topping)

Equipment:
– Measuring spoons
– Blender
– Waffle Iron
– Basting brush (if basting waffle iron with oil)
– Small saucepan
– Stirring spoon

Directions:
TO MAKE THE WAFFLES:
1. Combine all waffle ingredients in a blender and blend until smooth. Allow the batter to sit for about 10 minutes and then blend again for about 3 seconds before using.
2. Coat your waffle iron with a little bit of coconut oil to prevent everything from sticking.
3. Pour enough batter to just cover the bottom of the waffle maker, close and cook until light brown. Each waffle maker will vary by size and cooking time so keep an eye on the waffles to make sure they do not burn.

TO MAKE THE HONEY CINNAMON SYRUP:
1. Melt all topping ingredients together in a small saucepan and stir until just combined.
2. Drizzle over waffles, top with sliced bananas (optional) and enjoy!
