Angie’s Recipe of the Day: Peach BBQ Turkey Meatloaf

Ingredients

  • 1lb ground turkey
  • 1 (8oz) container of sliced mushrooms, diced
  • 1 yellow onion
  • 1 red bell pepper
  • ¼ cup Peach BBQ Sauce (recipe below)
  • 2 garlic cloves, minced
  • 2 tbsp fat of choice (bacon or coconut oil)
  • 2 tsp fresh tarragon, chopped
  • 1 tsp Tony Chachere’s Cajun Seasoning
  • salt and pepper, to taste
  • fresh tarragon, to garnish on top
  • Extra Peach BBQ Sauce for the top

Instructions

  1. Preheat oven to 375 degrees.
  2. Run your yellow onion and red pepper through the shredding attachment on your food processor to make your onion and pepper well minced.
  3. Add your onion and red pepper to a skillet over medium heat with 2 tablespoons of fat in it and 2 minced garlic cloves. Cook down until onions are translucent.
  4. Then add your cooked onion and pepper to a large mixing bowl along with the ground turkey, mushrooms, ¼ cup BBQ sauce, spices, and salt and pepper to taste. Mix well with your hands until you get them well combined.
  5. Add mixture to loaf pans. Pack it down well to make sure it stays combined.
  6. Place in oven and bake for 25-30 minutes.

Cook time:  25 mins

Total time:  35 mins

Peach Barbecue Sauce

makes about 3 cups, or 24 servings

2 tablespoons bacon or coconut oil 3 large peaches 1/2 large yellow onion, peeled and diced 2 cloves garlic, minced 2 cups tomato sauce 1/2 cup raw honey 2 tablespoons tamari or gluten-free soy sauce (coconut aminos) 1 tablespoon apple cider vinegar Salt and freshly ground pepper, to taste

Cut a small X at the base of each peach and drop into boiling water for about 30 seconds. Remove with a slotted spoon and plunge into an ice water bath. Once the peaches are completely cooled, remove from the ice bath and peel. Slice away from the pit and place into a food processor or blender; pulse until mostly smooth with a few solid bits and set aside.

Melt the coconut oil or bacon drippings in heavy medium saucepan over medium heat. Add onion and sauté until tender, about 10 minutes.  Add garlic and sauté for 1 minute more. Add the tomato sauce, honey, peach puree, and soy sauce; bring just to a boil. Reduce heat to low and simmer until sauce thickens slightly, about 20 minutes. Stir in the vinegar; season sauce to taste with salt and pepper.
