Angies Recipe of The Day:Sausage and Sun-dried Tomato Stuffed Mushroom
Ingredients:
4 Portobello Mushrooms
4 Cloves of Garlic
1 lb Italian Turkey Sausage
1 can Artichoke Hearts Chopped
½ an Onion diced
1 Jar Sundried Tomatoes (drained and chopped)
1 head Spinach Chopped
1/4 cup Mayonnaise (olive oil kind)Directions: Remove and chop mushroom stems. With a spoon scrape out the black ribs inside the mushrooms. Peel and dice the garlic and add to pan. Sauté garlic, onion and Turkey Sausage until the sausage is cooked through, Add remaining ingredients (including mushroom stems) other than Mayo, and sauté another 3 minutes. Remove from heat and stir in mayonnaise. Fill each mushroom with ¼ of the mixture. Bake at 400 for 12 minutes.Enjoy!
